Soy-based drink and its benefits

What is soy?
Soy is a leguminous plant native to Asia. This plant is currently cultivated in various countries. The matured or dried seeds of this plant are known as soybeans (Glycine max).

Uses of soy
From the seeds of the plant, milk, cheese (tofu), tempeh (a popular dish in Asian cuisine), sauces, flour, and oil are produced. In addition to the production of food products, soy is widely used in the manufacturing of animal feed and biodiesel as industrial products.

Composition and benefits of soy
100 grams of soy contains approximately 36 grams of protein, making it a plant rich in protein. Soy is also high in minerals such as potassium, calcium, magnesium, iron, zinc, and B vitamins. This plant is particularly rich in amino acids, especially lysine. With its low fat content and high fiber, soy is suitable for a healthy diet. Consuming soy may help reduce cholesterol levels by replacing animal proteins, which are high in saturated fats, in the diet.

What is soy-based drink?
A drink made from soy is considered soy-based. Soy-based drinks are used as an alternative to milk. Soy is mixed with water and pressed. Since it does not contain lactose, it is a preferred drink for vegans and vegetarians.

History of soy-based drink
Soy-based drinks were originally used solely as food, but over time, their popularity has increased due to the growing demand for plant-based alternatives. The history of soy-based drinks dates back thousands of years to the Chinese civilization. It is believed that during the Han Dynasty, various dishes and drinks were first made from soybeans. Later, Buddhist monks began to use them in plant-based diets. Soy-based drinks spread to Western countries in the mid-20th century and were introduced as an alternative for people with milk allergies. In the 1960s, with the rise of vegetarian and vegan diets, interest in soy-based drinks grew. The product was then introduced to a broader consumer market.

How to prepare soy-based drink
To prepare soy drink, first soak 1 cup of dried soybeans in 3-4 cups of water overnight. This helps make the processing easier. The soybeans are then washed thoroughly. Sometimes, to reduce the bitterness and make them softer, people boil the soybeans for about 5 minutes before using them. After soaking or boiling, add 3-4 cups of water and blend for 2-3 minutes at high speed in a blender. Then, strain the mixture. After straining, you can add honey, cinnamon, or vanilla extract to the soy-based drink according to your taste. The homemade drink can be stored in the refrigerator for about 3-4 days.
